Cooking school combats diabetes with flavor

The Chilton County Extension Office will host Right Bite Cooking School, which will offer classes that teach ways to cook that will help control diabetes.
The course consists of six classes that will take place at the Extension office each Tuesday a 10 a.m. beginning Feb. 2. The only day that the class will not meet during that time is Feb. 16.
According to Christina LeVert, a registered dietician with the Alabama Cooperative Extension System, the class will last just under two hours each day, but they will not restrict anybody if they are in the middle of learning.
“It is geared toward people with diabetes, but anyone wanting to eat healthier can attend,” LeVert said.
The program will provide tips regarding portion control, reading labels, as well as choosing various carbohydrates and sweeteners.
A different dish will be the focus for each class. Beef stroganoff, lemon chicken and pudding will represent the chosen dish for three of the six classes.
According to LeVert, this is the first such class to be offered in Chilton County, and people have responded well to it in previous courses held throughout Alabama and the surrounding states.
Not only will the class allow insight into controlling diabetes, it will also provide methods to use in order to help prevent future cases of the disease.
According to LeVert, she hopes to demonstrate that a healthy lifestyle does not require a disappearance of flavor in food.
“It teaches how to cook food that you and your family can enjoy while also eating healthy,” LeVert said.
With the year signifying a fresh start for so many people in terms of their diet and health, the timing of the class looks to build upon that change in mindset.
“Hopefully not everybody has given up on their New Year resolutions,” LeVert said. “Maybe we can make them last a little longer.”
